Roasted Portobello and Caramelized Onion Sandwich

Ingredients

  • 4 pieces of bread
  • 4 portobello mushrooms
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of dried mixed herbs
  • 1 large onion, peeled and sliced
  • 2 teaspoons of coconut sugar
  • Handful of rocket
  • 1 large tomato, sliced
  • 2 tablespoons of hummus
  • Olive oil
  • Pinch of salt

Preparation

  1. Preheat the oven to 190C, fan setting.

  2. Place the portobello mushrooms onto a baking tray and drizzle with olive oil, 1 tablespoon of balsamic, the mixed herbs and a pinch of salt. Mix well and cook for 20 minutes.

  3. While the mushrooms cook, place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the sliced onions and a pinch of salt. Cook for 10 minutes until the onions are soft. At this point, add the coconut sugar and mix well.

  4. Assemble the sandwiches; spoon hummus onto the bottom of 2 pieces of bread and top each with half of the sliced tomatoes, mushrooms, caramelized onions and a small handful of rocket. Top each with another piece of bread.
