Harissa Hummus and Avocado Sandwich
Ingredients
Harissa hummus
- 1x 400g can of chickpeas, drained
- 3 tablespoons of olive oil
- 2 tablespoons of tahini
- 2 tablespoons of harissa paste
- Juice of 1 lemon
- 75ml water, plus more if needed
- 2 cloves of roasted garlic
- 1 teaspoon of paprika
- Pinch of sea salt
Sandwich
- 2 slices of bread
- 1/2 avocado, sliced
- Handful of salad leaves
- Pinch of chilli flakes (optional)
Preparation
Place all of the hummus ingredients into a powerful food processor and pulse until a smooth hummus forms. Add more water if needed to reach the desired consistency.
Toast the bread.
Spoon a large tablespoon of hummus onto one slice of toast.
Top with salad leaves, sliced avocado, and chilli flakes if using.
Sandwich together with the last slice of toast.
Tips
This recipe makes more hummus than needed for one sandwich. Store extra hummus in an airtight container in the fridge for 2-3 days.
