Vegan Cheese Toastie with Caramelized Onions

Ingredients

  • Bread
  • Vegan cheese
  • Mushrooms
  • Lingonberry jam

Caramelized onions

  • 2 tbsp olive oil
  • 3 white onions sliced
  • A pinch of salt
  • 1.5 tbsp balsamic vinegar
  • A pinch of brown or coconut sugar, optional

Preparation

Caramelized onions

  1. Heat the oil in a large deep frying pan over a low heat.

  2. Add the onions and salt and cook slowly for around 15 minutes, stirring occasionally, until they become soft golden in colour.

  3. Add the vinegar and sugar if using and keep cooking on a low heat for another 5 minutes, stirring occasionally until the onions are sticky.

Sautéed mushrooms

  1. Sauté the mushrooms in a pan until softened.

Toastie assembly

  1. Spread lingonberry jam on bread slices.

  2. Add vegan cheese, caramelized onions, and sautéed mushrooms between the slices.

  3. Toast or grill until the cheese melts and the bread is golden and crunchy.
