Vegan Grilled Cheese with Caramelized Onions

Ingredients

  • 4 slices of sourdough
  • 4 slices of vegan cheese
  • Fresh figs, sliced
  • About 1 tablespoon vegan mayonnaise or vegan butter

Caramelized onions

  • 1 large sweet onion, thinly sliced
  • 1 tablespoon vegan butter
  • Pinch of salt
  • 1 cup apple cider or juice

Preparation

  1. Sauté sliced onions with vegan butter and salt over low heat for 8 to 10 minutes.

  2. Add half a cup of apple cider or juice to the pan, stirring occasionally.

  3. When the liquid is mostly gone, add the remaining half cup of cider or juice and continue sautéing until onions are rich in color and caramelized.

  4. Spread sourdough slices on one side with vegan mayonnaise or butter.

  5. Place one slice buttered side down on a heated pan or grill pan, layer with cheese, caramelized onions, sliced figs, another slice of cheese, and top with the second bread slice buttered side up.

  6. Grill from both sides until bread is golden brown and cheese has melted.

Tips

  1. The perfectly caramelized onions take at least 20 minutes. Don’t rush this step, don’t stir too much, and use low heat to avoid burning.
