Grilled Cheese with Caramelized Onions
Ingredients
- 4 slices of sourdough or bread of choice
- Your favorite vegan cheese slices
- Vegan mayonnaise or vegan butter
Caramelized onions
- 1 large sweet onion
- 1 tbsp vegan butter or olive or avocado oil
- 1 cup apple cider
- Pinch of salt (optional, if not using salted butter)
Preparation
Peel and finely slice the onion.
Sauté the onion with vegan butter on low to medium heat for 5 minutes until translucent.
Add half a cup of apple cider and cook, stirring occasionally, for 5 minutes.
Add the remaining half cup of apple cider and cook until golden and caramelized, about 5 more minutes.
Spread one side of each sourdough slice with vegan mayonnaise or butter.
Assemble the sandwich by placing one bread slice buttered side down in a heated pan or grill pan, layering with cheese, caramelized onions, another layer of cheese, and topping with the second bread slice buttered side up.
Grill on both sides until the bread is golden brown and the cheese has melted.
Tips
Caramelized onions take 20-25 minutes and should be cooked on low heat with minimal stirring to avoid burning.
