Vegan Cheezy Truffle Eggs on Sourdough

Ingredients

  • 2 slices sourdough
  • 1.5 cups of @eatjust (vegan egg substitute)
  • 1 tsp truffle oil
  • 1/2 cup of vegan cheese - I used @violife_foods
  • 2 tsp chopped chives
  • 1 tsp chipotle chili - I used 365 @wholefoods
  • 1 tbsp vegan butter
  • Salt + pepper to taste

Preparation

  1. Heat butter in a pan over medium heat.

  2. Once melted, place the sourdough in the pan and use a spatula to coat evenly with butter.

  3. Place a heavy lid on top of each slice and toast each side until golden brown for 2-3 minutes.

  4. Meanwhile, in a small pot, combine just egg, vegan cheese, and truffle oil.

  5. Cook the egg mixture over medium heat, seasoning with salt and pepper.

  6. Remove from heat every minute for 20 seconds and use a spatula to fold the eggs evenly.

  7. Continue cooking until the eggs are light and fluffy, about 5 minutes.

  8. Serve the cooked egg mixture over the toasted sourdough slices.

  9. Sprinkle with chopped chives, salt, pepper, and chipotle chili.

  10. Enjoy!
