Vegan Cheesy Truffle Eggs on Sourdough

Ingredients

  • 2 slices sourdough
  • 1.5 cups just egg
  • 1 tsp truffle oil
  • 1/2 cup vegan cheese
  • 2 tsp chopped chives
  • 1 tsp chipotle chili
  • 1 tbsp vegan butter
  • salt and pepper to taste

Preparation

  1. Heat butter in a pan over medium heat, once melted place the sourdough in the pan and use a spatula to make sure butter is evenly coated. Place a heavy lid on top of each slice and toast each side until golden brown for 2-3 minutes.

  2. Meanwhile, place just egg, cheese and truffle oil in a small pot and cook over medium heat. Season with salt and pepper and remove from heat every minute for 20 seconds, using a spatula to continue folding the eggs evenly. Cook until light and fluffy, about 5 minutes.

  3. Serve over the sourdough toast and sprinkle with chives, salt, pepper and chipotle chili.
