Vegan Garlic Chive Mashed Potatoes

Ingredients

  • 5 pounds golden potatoes
  • 2 bunches fresh chives
  • 2 cups oat milk or any creamy unsweetened milk
  • 5 tablespoons vegan butter, plus a little extra melted for on top
  • 6 cloves garlic
  • Pinch of salt
  • 2 tablespoons salt for boiling water
  • 1 teaspoon ground pepper

Preparation

  1. Peel and quarter the potatoes. Bring a large pot of water to a boil. Add 2 tablespoons of salt to the water, then add the potatoes. Boil for 20 minutes or until tender. Drain the potatoes and return them to the pot. While still hot, add the minced garlic, 6 tablespoons of butter, chives, and mash with a potato masher or large fork.

  2. Add only one-third of the milk, a small pinch of salt, and ground pepper. Mix well to combine.

  3. After mixing, add a few more splashes of milk, mix, then add the remaining milk. Mix and taste, adding more salt if needed.

  1. Halve the ingredients for 6-7 portions.
