Quick and Easy Vegan Cacio E Pepe Pasta

Ingredients

  • 220g pasta (linguine or your choice)
  • 100g vegan butter (e.g., Earth Balance)
  • 150g vegan parmesan (finely grated, e.g., Violife Foods)
  • Salt and freshly cracked black pepper

Preparation

  1. Bring a large pot of heavily salted water to a boil and cook the pasta until it's 2 minutes away from being fully cooked.

  2. While the pasta is cooking, prepare the Cacio e Pepe sauce. In a large pan over low heat, melt the vegan butter.

  3. Add 3/4 cup of pasta water to the butter in the pan. Add a generous amount of cracked black pepper and a small pinch of salt.

  4. Once the butter has melted, grate in the vegan parmesan and stir to melt. Increase the heat to medium and stir continuously.

  5. Drain the pasta, reserving a little extra cooking water, and add the pasta to the pan with the sauce.

  6. Toss the pasta in the sauce until it's fully coated and incorporated. If needed, add a splash of the reserved pasta water to create a creamy sauce.

  7. Serve the vegan Cacio e Pepe pasta with an extra sprinkle of cracked black pepper.
