Quick and Easy Vegan Cacio E Pepe Pasta
Ingredients
- 220g pasta (linguine or your choice)
- 100g vegan butter (e.g., Earth Balance)
- 150g vegan parmesan (finely grated, e.g., Violife Foods)
- Salt and freshly cracked black pepper
Preparation
Bring a large pot of heavily salted water to a boil and cook the pasta until it's 2 minutes away from being fully cooked.
While the pasta is cooking, prepare the Cacio e Pepe sauce. In a large pan over low heat, melt the vegan butter.
Add 3/4 cup of pasta water to the butter in the pan. Add a generous amount of cracked black pepper and a small pinch of salt.
Once the butter has melted, grate in the vegan parmesan and stir to melt. Increase the heat to medium and stir continuously.
Drain the pasta, reserving a little extra cooking water, and add the pasta to the pan with the sauce.
Toss the pasta in the sauce until it's fully coated and incorporated. If needed, add a splash of the reserved pasta water to create a creamy sauce.
Serve the vegan Cacio e Pepe pasta with an extra sprinkle of cracked black pepper.
