Grilled Cheese with Caramelized Onions and Figs

Ingredients

  • 4 slices of sourdough or bread of choice
  • Your favorite vegan cheese slices
  • 2-3 fresh figs
  • Vegan mayonnaise or vegan butter
  • Caramelized onions

Caramelized onions

  • 1 large sweet onion, sliced thinly
  • 1 tbsp avocado oil or vegan butter
  • 1 cup apple cider

Preparation

  1. Sauté onions with vegan butter on low to medium heat for 5 minutes.

  2. Add 1/2 cup of apple cider to the pan and stir occasionally.

  3. After another 5 minutes, add the remaining 1/2 cup of apple cider.

  4. Continue sautéing until onions are golden and caramelized, about 10-15 more minutes, for a total of 20-25 minutes.

  5. Spread vegan mayo or butter on one side of each sourdough slice.

  6. Place one slice smeared side down on a heated pan or grill pan.

  7. Layer with cheese, caramelized onions, sliced figs, another layer of cheese, and top with the second sourdough slice smeared side up.

  8. Grill from both sides until bread is golden brown and cheese is melted.

Tips

  1. Don't rush the caramelization process, avoid stirring too much, and use low heat to prevent burning.

  2. If fresh figs are unavailable, omit them or substitute with fig butter or jam.
