Pesto Stuffed Grilled Cheese

Ingredients

  • 4 slices of sourdough or bread of choice
  • 2-3 tablespoons of pesto
  • 4 slices of your favorite vegan cheese
  • Vegan mayo or butter for spreading

Preparation

  1. Spread all bread slices with vegan mayo or butter on one side and a generous layer of pesto on the other side.

  2. Heat up your skillet on low to medium and place bread mayo or butter side down, top with vegan cheese, and the second slice of bread pesto side down.

  3. Grill until browned from both sides and enjoy!
