Sesame Tofu Cold Noodles Dish
Ingredients
- 1 pack of firm tofu
- 1-2 bunches of dried udon noodles
- 1 cup shredded carrots and cucumbers
- 1 teaspoon grated ginger
- 3 cloves of minced garlic
- sesame seeds
- sesame oil
- salt to taste
Tofu sauce
- 1 tablespoon tamari or coconut amino or soy sauce
- 1 teaspoon sesame oil
- drizzle of maple syrup
Noodle sauce
- 1 tablespoon tamari or soy sauce
- 3 teaspoons sesame paste
- 3 teaspoons chili crisp
- 2 teaspoons maple syrup
- 1-2 teaspoons sesame oil
- 1-2 tablespoon hot water
Preparation
Whisk together the tofu sauce ingredients until well combined; this can be made ahead of time.
Whisk together the noodle sauce ingredients until well combined.
Cook the udon noodles according to package instructions, then rinse with ice water and set aside.
Drain the firm tofu well and cut it into strips.
In a heated non-stick pan with a little oil, pan fry the tofu strips until lightly golden brown on each side.
Push the tofu aside, add a little more oil, and sauté the minced garlic and grated ginger until fragrant.
Add the tofu sauce and coat the tofu well, allowing it to absorb the sauce; turn off heat, taste test, and sprinkle with sesame seeds, then set aside.
Place the cooked and drained noodles in a big bowl, toss with the noodle sauce and shredded vegetables.
Serve as is or with additional crispy chili flakes.
