Simple Vegan Stir Fried Eggplant Thai Style
Ingredients
- 1 eggplant, roughly diced
- 2-3 tbsp coconut oil
- 1/2 onion
- 6 cloves garlic, minced
- 1/2 tsp chili flakes
- 1/4 cup water
- 2 tbsp gluten-free soy sauce
- 2 tbsp vegetarian oyster sauce
- Optional: 1/4 cup macadamias
Preparation
Heat oil up in large frying pan over medium-high heat. Add in onion, garlic, chili, and eggplant. Stir-fry for 5 minutes. When frying pan becomes dry, add a little of the water a few tablespoons at a time.
Add soy sauce and continue stir-frying for 5 more minutes, or until eggplant is soft and the white flesh is almost translucent. Add a little more water when pan becomes too dry.
When eggplant is soft, add in the oyster sauce and stir through.
Remove from heat, let cool and add in macadamias if using. Enjoy.
