Vegan Tart with Fresh Goji Berries
Ingredients
Crust
- 1.5 cups mixed nuts
- 0.5 cup shredded coconut
- 6-7 Medjool dates
- 1/2 tsp salt
Filling
- 1.5 cups goji berries
- 0.5 cup strawberries
- 0.5 cup raspberries
- 2 cups full fat coconut milk
- 1/4 cup maple syrup
- 1 Tbsp cornstarch
- 2 tsp agar agar
Preparation
Base
Blend the nuts to crumbs.
Add the dates and salt and blend everything.
Spread the mixture evenly into a tart tin (8”/20cm).
Place it in the fridge or freezer while making the filling.
Filling
Blend the berries together.
Pour the mixture into a pot.
Add the rest of the ingredients and warm up over medium heat.
Remove from heat when the mixture starts thickening.
Optionally, sieve to remove berry pulp.
Pour over the crust and set aside to cool down and set.
