Veggie Ratatouille with Chickpeas and Bread

Ingredients

  • Spinach
  • Zucchini
  • Chickpeas
  • Sea salt
  • Smoked paprika
  • Virgin oil
  • Thyme
  • Canned tomatoes

Preparation

  1. Heat virgin oil in a large pot over medium heat

  2. Add chopped zucchini and spinach and sauté until softened

  3. Stir in chickpeas, canned tomatoes, thyme, smoked paprika, and sea salt

  4. Simmer the mixture until vegetables are tender and flavors meld

  5. Meanwhile, heat a griddle pan and cook bread slices until golden and crisp

  6. Serve the ratatouille hot with the griddled bread on the side
