warming serve of vegan chilli quinoa

Ingredients

  • * 1 cup quinoa
  • * 2 cups water
  • * 2 tbsp olive oil
  • * 6 cloves garlic, minced
  • * 11/2 cups chopped onion
  • * 2 cans black beans, drained
  • * 2 28 oz cans crushed tomatoes
  • * 2 bell peppers, roughly chopped
  • * 1 tbsp chili powder
  • * 1 tsp dried oregano
  • * 11/2 tsp dried parley
  • * 2 tsp coconut sugar
  • * garlic salt
  • * salt and pepper
  • * red pepper flakes, to taste
  • * 2 cans golden sweet corn
  • * cilantro for garnish

Preparation

  1. Whilst your quinoa is cooking, heat your olive oil and begin by sautéing your garlic and onions

  2. Mix in the black beans, crushed toamatoes, veggies and herbs, and then stir in your sugar to decrease the acidity of your tomatoes

  3. Finally, season with garlic and salt, and leave to cook for 25 minutes

  4. Stir in the quinoa and corn once done and leave to cook for another 10 minutes, and then this delicious dish is all yours
