Cozy Red Lentil Dal Stew

Ingredients

  • 1 large onion diced
  • 2 inch piece of ginger finely chopped
  • 3 garlic cloves minced
  • 1/2 tsp turmeric powder
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp chili flakes
  • 2 bay leaves
  • 1 cup split red lentils
  • 1 28 oz can crushed or whole tomatoes {hand crushed}
  • 1 28 oz can of water
  • 1/2 cup chopped parsley or cilantro

Topping

  • 1/4 cup olive oil + 1 tbsp cumin seed & 1 tbsp fennel seed

Preparation

  1. Heat olive oil in a deep pan or pot

  2. Once hot, add onion and cook for 5 minutes

  3. Add garlic, ginger and spices, cook for another 3 minutes

  4. Add lentils, tomatoes, water, a sprinkle of salt, pepper and bay leaves

  5. Cover and let simmer for 25 minutes, stirring every so often

  6. Remove from heat and in a small saucepan, add olive oil and cumin and fennel seeds, toast for a few minutes

  7. Divide into bowls, top with the olive oil and seed mixture and lots of fresh parsley or cilantro

  8. Serve over rice or with naan

Notes

  1. This is a simplified version of traditional red lentil dal and works well with available spices
