Cozy Red Lentil Dal Stew
Ingredients
- 1 large onion diced
- 2 inch piece of ginger finely chopped
- 3 garlic cloves minced
- 1/2 tsp turmeric powder
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 tsp chili flakes
- 2 bay leaves
- 1 cup split red lentils
- 1 28 oz can crushed or whole tomatoes {hand crushed}
- 1 28 oz can of water
- 1/2 cup chopped parsley or cilantro
Topping
- 1/4 cup olive oil + 1 tbsp cumin seed & 1 tbsp fennel seed
Preparation
Heat olive oil in a deep pan or pot
Once hot, add onion and cook for 5 minutes
Add garlic, ginger and spices, cook for another 3 minutes
Add lentils, tomatoes, water, a sprinkle of salt, pepper and bay leaves
Cover and let simmer for 25 minutes, stirring every so often
Remove from heat and in a small saucepan, add olive oil and cumin and fennel seeds, toast for a few minutes
Divide into bowls, top with the olive oil and seed mixture and lots of fresh parsley or cilantro
Serve over rice or with naan
Notes
This is a simplified version of traditional red lentil dal and works well with available spices
