Mash Potato Chocolate Fudge Cake

Ingredients

  • 250g mashed potato (instant works fine)
  • 50g margarine
  • 80g any sugar
  • 20g cocoa powder
  • 1 egg (or 1 flax egg/ chia egg/ egg replacer)
  • 1 tbsp baking powder
  • 1 tsp cocoa powder
  • 1 tbsp margarine
  • 6 tbsp icing sugar
  • splash of water

Preparation

  1. Make the mash and leave to cool

  2. Add all the cake ingredients into a bowl and mix until smooth

  3. Microwave on high in a lunch box/ microwave safe container for 8-9 minutes

  4. Turn out onto a plate and leave to cool

  5. Make the icing by mixing the above ingredients until smooth and creamy

  6. Then pour onto your cake
