Mash Potato Chocolate Fudge Cake
Ingredients
- 250g mashed potato (instant works fine)
- 50g margarine
- 80g any sugar
- 20g cocoa powder
- 1 egg (or 1 flax egg/ chia egg/ egg replacer)
- 1 tbsp baking powder
- 1 tsp cocoa powder
- 1 tbsp margarine
- 6 tbsp icing sugar
- splash of water
Preparation
Make the mash and leave to cool
Add all the cake ingredients into a bowl and mix until smooth
Microwave on high in a lunch box/ microwave safe container for 8-9 minutes
Turn out onto a plate and leave to cool
Make the icing by mixing the above ingredients until smooth and creamy
Then pour onto your cake
