Easy German Sheet Pan Onion Cake
Ingredients
Filling
- 200 g fatty bacon
- 1200 g onions
- 2 tbsp neutral cooking oil (e.g., rapeseed oil)
- 1/2 tsp whole caraway seeds
- 300 g crème fraîche (or sour cream)
- 125 g low-fat quark
- 5 large eggs
- 1/2 tsp sweet paprika powder
- 2 pinches ground nutmeg
- 1 pinch freshly ground pepper
- 1 tsp salt
Dough
- 350 g all-purpose flour (Type 405)
- 3 tsp baking powder
- 1 tsp salt
- 125 g low-fat quark
- 100 ml milk
- 120 ml neutral cooking oil (e.g., rapeseed oil)
For pan and garnish
- Neutral cooking oil (for greasing the pan)
- Chopped chives (for garnish)
Preparation
Cut bacon into small cubes and fry in a large pan without oil for 2-3 minutes, then remove from pan
Peel, halve, and dice the onions
Heat oil in the same pan
Cook onion cubes over medium heat for about 10 minutes, stirring occasionally
Add caraway seeds and bacon cubes, mix, and set aside
Preheat the oven to 200°C conventional or 180°C fan
Grease a sheet pan with a little oil
Whisk crème fraîche, quark, and eggs until smooth
Season with paprika powder, nutmeg, pepper, and salt
Mix flour, baking powder, and salt in a bowl
Add quark, milk, and oil, and knead into a smooth dough
Place the dough on the sheet pan and spread evenly over the entire pan
Spread the onion-bacon mixture evenly over the dough
Pour the egg mixture over the top
Bake in the preheated oven for about 35 minutes
Sprinkle with chives and serve warm
Tips
Vegetarian option: Replace bacon with 2-3 red onions for a more colorful variation
Alternatively, use the same amount of finely diced smoked tofu instead of bacon
