Green Melon Cucumber Smoothie

Ingredients

  • 1/2 or 1/4 green melon depending on size
  • 1 cucumber
  • 100g fresh goat cheese
  • 1-2 tablespoons apple cider vinegar
  • Small handful of mint leaves
  • Lemon juice
  • 150-200ml water
  • Salt
  • Large handful of fresh spinach shoots for color
  • Ice cubes

Preparation

  1. Cut the melon, peel, deseed and cut the cucumber. Blend them in a blender with all the ingredients.

  2. Adjust the seasoning if needed: salt, vinegar, mint.

  3. Serve very cold, with a bit more fresh goat cheese, mint, a drizzle of olive oil and a pinch of fleur de sel.
