Artisanal Seeded Nut Bread

Ingredients

  • 4 cups brown bread flour
  • 1 cup white bread flour
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 1/2 cup sesame seeds
  • 1/2 cup walnut pieces
  • 1/2 cup pecan pieces
  • 1 tablespoon sea salt
  • 1 teaspoon coconut sugar
  • 1 sachet instant dried yeast
  • 1/4 cup plus 1 tablespoon maple syrup
  • 750 ml lukewarm water
  • 1/4 cup olive oil
  • Mixed seeds for topping

Preparation

  1. Grease two medium loaf tins and line with parchment paper

  2. In a large mixing bowl, whisk together the flour, seeds, nuts, sugar and salt

  3. In a medium bowl, combine the water, maple syrup, olive oil and sprinkle over the yeast

  4. Cover with a clean dish towel and set aside until the top is foamy

  5. Create a well in the dry ingredients and add the yeast mix stirring with a spatula to combine

  6. It will be a sloppy dough

  7. Divide the mixture between the two tins

  8. Cover with a dish cloth and set aside until the loaves are doubled in size - between 1 and 2 hours

  9. Preheat the oven to 180C and sprinkle the loaves with mixed seeds

  10. Bake for 1 hour or until a toothpick inserted comes out clean

  11. Allow to cool in the tin before turning out on to a wire rack
