Artisanal Seeded Nut Bread
Ingredients
- 4 cups brown bread flour
- 1 cup white bread flour
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1/2 cup sesame seeds
- 1/2 cup walnut pieces
- 1/2 cup pecan pieces
- 1 tablespoon sea salt
- 1 teaspoon coconut sugar
- 1 sachet instant dried yeast
- 1/4 cup plus 1 tablespoon maple syrup
- 750 ml lukewarm water
- 1/4 cup olive oil
- Mixed seeds for topping
Preparation
Grease two medium loaf tins and line with parchment paper
In a large mixing bowl, whisk together the flour, seeds, nuts, sugar and salt
In a medium bowl, combine the water, maple syrup, olive oil and sprinkle over the yeast
Cover with a clean dish towel and set aside until the top is foamy
Create a well in the dry ingredients and add the yeast mix stirring with a spatula to combine
It will be a sloppy dough
Divide the mixture between the two tins
Cover with a dish cloth and set aside until the loaves are doubled in size - between 1 and 2 hours
Preheat the oven to 180C and sprinkle the loaves with mixed seeds
Bake for 1 hour or until a toothpick inserted comes out clean
Allow to cool in the tin before turning out on to a wire rack
