Vegan Chocolate Pancakes with Berries

Ingredients

  • 2 cups self-raising wheat flour
  • 1/2 cup raw cacao powder
  • 2.5 cups soy milk or nut milk
  • 2 cups berries of choice
  • 1/4 cup maple syrup to serve

Preparation

  1. In a bowl combine the flour and cacao.

  2. Add in the soy milk and whisk together.

  3. Heat a pan over medium heat and cook the pancakes by cooking 1/4 cup of batter in the pan. Flip when bubbles start to form.

  4. While the pancakes cook, in a pot over medium heat cook the berries with 2-3 tbsp of maple syrup. Stir often and mash the berries slightly with the back of the spoon.

  5. Serve the pancakes with the berries, extra maple syrup or chocolate sauce.
