Refreshing Berry Smoothie Bowl with Granola
Ingredients
Espresso granola
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- 2 tbsp espresso granules
- 1/2 small banana mashed
- some cinnamon
- some maca powder
- 2 cups oats
- 1/2 cup nuts (pecans and slivered almonds)
Smoothie
- frozen banana
- frozen berries (strawberries, blackberries & raspberries)
- scoop of strawberries n cream protein powder
- tsp of maca powder
- milk or water to blend
Toppings
- banana slices
- frozen raspberries
- espresso granola
- desiccated coconut
Preparation
Espresso granola
Melt 1 tbsp of coconut oil with 1 tbsp of maple syrup and 2 tbsp espresso granules.
Stir until melted together then add 1/2 small banana mashed, some cinnamon & maca powder.
Add oats (around 2 cups) and 1/2 cup of nuts (pecans and slivered almonds).
Spread evenly on a tray and bake at 180°C for 15 mins.
Leave to cool completely before breaking into pieces.
Smoothie bowl
Blend frozen banana, frozen berries, a scoop of strawberries n cream protein powder, tsp of maca powder, and milk or water to blend.
Pour the smoothie into a bowl.
Top with banana slices, frozen raspberries, espresso granola, and desiccated coconut.
