Refreshing Berry Smoothie Bowl with Granola

Ingredients

Espresso granola

  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • 2 tbsp espresso granules
  • 1/2 small banana mashed
  • some cinnamon
  • some maca powder
  • 2 cups oats
  • 1/2 cup nuts (pecans and slivered almonds)

Smoothie

  • frozen banana
  • frozen berries (strawberries, blackberries & raspberries)
  • scoop of strawberries n cream protein powder
  • tsp of maca powder
  • milk or water to blend

Toppings

  • banana slices
  • frozen raspberries
  • espresso granola
  • desiccated coconut

Preparation

Espresso granola

  1. Melt 1 tbsp of coconut oil with 1 tbsp of maple syrup and 2 tbsp espresso granules.

  2. Stir until melted together then add 1/2 small banana mashed, some cinnamon & maca powder.

  3. Add oats (around 2 cups) and 1/2 cup of nuts (pecans and slivered almonds).

  4. Spread evenly on a tray and bake at 180°C for 15 mins.

  5. Leave to cool completely before breaking into pieces.

Smoothie bowl

  1. Blend frozen banana, frozen berries, a scoop of strawberries n cream protein powder, tsp of maca powder, and milk or water to blend.

  2. Pour the smoothie into a bowl.

  3. Top with banana slices, frozen raspberries, espresso granola, and desiccated coconut.
