Chimichurri Crispy Chickpea Bowl

Ingredients

  • 1 tbsp chimichurri spice
  • 2 tsp minced garlic
  • Broccolini
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • cous cous
  • 1 cup cous cous
  • 1 cup veg broth
  • 1 tbsp vegan butter
  • 1 tsp minced garlic
  • 1/2 tsp chimichurri spice

Preparation

  1. Preheat your @ninjakitchen foodi oven on roast. add rinsed and drained chickpeas to the provided baking sheet with the broccolini. toss with rest of the ingredients. roast for 20 min

  2. In a small saucepan, add broth, butter, and garlic. bring to a boil. add cous cous, cover, and take off the heat. let sit for 8 min. add chimichurri spice and fluff with a fork
