Chimichurri Crispy Chickpea Bowl

Ingredients

  • 1 15 oz. can chickpeas
  • 1 tbsp chimichurri spice
  • 2 tsp minced garlic
  • Broccolini
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 cup cous cous
  • 1 cup veg broth
  • 1 tbsp vegan butter
  • 1 tsp minced garlic
  • 1/2 tsp chimichurri spice

Preparation

  1. Preheat your Ninja Kitchen Foodi oven on roast.

  2. Add rinsed and drained chickpeas to the provided baking sheet with the broccolini.

  3. Toss with the rest of the ingredients.

  4. Roast for 20 minutes.

  5. In a small saucepan, add broth, butter, and garlic.

  6. Bring to a boil.

  7. Add cous cous, cover, and take off the heat.

  8. Let sit for 8 minutes.

  9. Add chimichurri spice and fluff with a fork.

  10. Serve and enjoy.
