Creamy Veggie Pasta Bowl with Hemp Seeds
Ingredients
- 7 oz gluten-free pasta of choice
- 1 large red onion, chopped
- 7 oz Brussels sprouts, halved
- 1/2 cup plant based milk
- 1 tbsp nutritional yeast
- 1/4 tsp cumin
- 1 tbsp gluten-free flour
- 1/4 tsp salt
- 1 cup spinach
- Hemp seeds, to serve
Preparation
Cook the pasta according to packaging instructions.
Meanwhile, add the onion to a non-stick frying pan and sauté for 2-3 minutes, until softened.
Add the Brussels sprouts face down, and cook, stirring occasionally, for 4-5 minutes, then pour in the coconut milk together with nutritional yeast and cumin; stir to combine.
Drain the pasta and transfer to the frying pan, also adding gluten-free flour, salt and spinach.
Stir for 1-2 minutes, until the sauce thickens, then serve immediately with a sprinkling of hemp seeds.
