Creamy Veggie Pasta Bowl with Hemp Seeds

Ingredients

  • 7 oz gluten-free pasta of choice
  • 1 large red onion, chopped
  • 7 oz Brussels sprouts, halved
  • 1/2 cup plant based milk
  • 1 tbsp nutritional yeast
  • 1/4 tsp cumin
  • 1 tbsp gluten-free flour
  • 1/4 tsp salt
  • 1 cup spinach
  • Hemp seeds, to serve

Preparation

  1. Cook the pasta according to packaging instructions.

  2. Meanwhile, add the onion to a non-stick frying pan and sauté for 2-3 minutes, until softened.

  3. Add the Brussels sprouts face down, and cook, stirring occasionally, for 4-5 minutes, then pour in the coconut milk together with nutritional yeast and cumin; stir to combine.

  4. Drain the pasta and transfer to the frying pan, also adding gluten-free flour, salt and spinach.

  5. Stir for 1-2 minutes, until the sauce thickens, then serve immediately with a sprinkling of hemp seeds.
