Easy Quinoa and Tofu Power Bowl
Ingredients
- 1/2 cup quinoa
- 1 cup water
- 1/2 teaspoon vegetable bouillon
- tofu
- fresh vegetables
- greens
Sauce
- fresh lemon juice
- tahini
- maple syrup
- hot sauce
- nutritional yeast
Preparation
Cook 1/2 cup quinoa in 1 cup water with 1/2 teaspoon vegetable bouillon for extra flavor.
Mix together fresh lemon juice, tahini, maple syrup, hot sauce, and nutritional yeast to make the sauce.
Assembly
Cube the tofu and pan-fry until golden brown
Chop fresh vegetables and greens as desired
Assemble the power bowl by combining cooked quinoa, prepared tofu, vegetables, greens, and the sauce
