Easy Vegan Bolognese with Black Quinoa

Ingredients

  • 2-3 carrots
  • 1 red bell pepper
  • 2 celery stalks
  • 1 small leek
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 450 grams tomato passata
  • 120 milliliters red wine
  • 1.5 tablespoons dried Italian herbs
  • 1 teaspoon smoked paprika powder
  • 3 bay leaves
  • 1 tablespoon maple syrup
  • 50 grams black quinoa
  • 1-2 teaspoons salt
  • 1/4 teaspoon black pepper

Preparation

  1. Prepare vegetables as described above. Heat a large pan, add olive oil, garlic and leeks and sauté for 1 minute. Add the vegetables and sauté for 5 minutes.

  2. Add herbs, smoked paprika, salt and pepper and sauté for another minute. Deglaze with wine and add tomato passata, maple syrup and bay leaves.

  3. Cover with a lid and let simmer for 45 minutes on low heat. In the meantime, cook pasta according to the packaging instructions.

  4. Add quinoa in the last 20 minutes of the cooking and add a little water if necessary.

  5. Add more maple syrup, wine, salt and pepper to taste.
