Easy Vegan Creamy Pad Thai

Ingredients

  • sauce
  • 1 can coconut milk: use all of it
  • 3 tbsp tamari
  • 2 tbsp creamy peanut butter
  • 1 tsp garlic powder
  • dash of red chili flakes
  • squeeze of fresh lime
  • 1 tsp corn starch
  • pad thai brown rice noodles
  • broccoli
  • bok choy
  • zucchini
  • sesame oil

Preparation

  1. Bring large pot to boil add noodles cook till soft

  2. Chop up veggies or use frozen veggies, add to frying pan and drizzle sesame oil and fry up

  3. Make sauce by mixing all sauce ingredients in a bowl

  4. Whisk till smooth and pour over the veggies

  5. It should be runny but with heat it will thicken up since we added in the corn starch

  6. Add cooked noodles into frying pan and mix veggies and sauce all together

  7. Let sauce thicken up with noodles on high heat for a minute or so

  8. Garnish with fresh lime and crushed peanuts!
