Mediterranean Inspired Quinoa Salad
Ingredients
- 1.5 cups quinoa
- 3 cups water
- 1 can black olives
- 1/2 red onion
- 1 can chickpeas
- 1 lime
- 1/2 cup fresh parsley
- Salt to taste
- Black pepper to taste
- 2 tsp dried dill weed
- 1 tsp garlic powder
Preparation
Cook the quinoa with water.
Chill the cooked quinoa in the fridge until cold.
Mix everything together in one large bowl.
