Mediterranean Inspired Quinoa Salad

Ingredients

  • 1 can black olives, drained and rinsed
  • 1/2 red onion, minced
  • 1 can chickpeas, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup fresh parsley, chopped
  • salt to taste
  • black pepper to taste
  • 2 tsp dried dill weed
  • 1 tsp garlic powder

Preparation

  1. Cook your quinoa, chill in your fridge until cold, and then mix EVERYTHING together in one large bowl. Enjoy
