Mediterranean Inspired Quinoa Salad

Ingredients

  • 1.5 cups quinoa
  • 3 cups water
  • 1 can black olives
  • 1/2 red onion
  • 1 can chickpeas
  • 1 lime
  • 1/2 cup fresh parsley
  • Salt to taste
  • Black pepper to taste
  • 2 tsp dried dill weed
  • 1 tsp garlic powder

Preparation

  1. Cook the quinoa with water.

  2. Chill the cooked quinoa in the fridge until cold.

  3. Mix everything together in one large bowl.

  4. Enjoy!
