Mediterranean Quinoa Chickpea Salad
Ingredients
- 1 cup quinoa, dry
- 2 cups water
- 2 cans of chickpeas
- 2 medium Persian cucumbers
- 2 medium tomatoes
- 1 cup fresh cilantro
- 6-8 fresh mint leaves
- 1/4 cup fresh lemon/lime juice (or to taste)
- Drizzle of extra virgin olive oil
- Salt to taste
Preparation
Cook quinoa first. Bring 1 cup water to boil in a small pot. Add quinoa and turn down heat to simmer for about 15 minutes.
Dice cucumber, tomato and mince herbs. Add to a large mixing bowl when done.
Open two cans of chickpeas, drain and rinse with fresh water. Add to bowl.
Cut limes and juice to fill about 1/4 cup or to taste. Add to the bowl.
Once quinoa is done cooking, fluff and set aside to cool off.
Once quinoa is cooked off add to the bowl and mix everything together.
Add salt to taste and enjoy!
