Quinoa Red Onion Tomato Chickpea Pesto Salad

Ingredients

  • 200g quinoa (we use mixed quinoa)
  • 1x 400g can of chickpeas
  • Large handful of cherry tomatoes
  • 1 red onion
  • 3 spring onions
  • 1 teaspoon of apple cider vinegar
  • 2 tablespoons of pesto (we use our roasted almond pesto)
  • Large handful of fresh rocket
  • Sprinkling of salt and pepper

Preparation

  1. Cook the quinoa.

  2. Toss everything together.

  3. This recipe can be made in one pan and takes approximately 15 minutes.
