Quinoa Red Onion Tomato Chickpea Pesto Salad
Ingredients
- 200g quinoa (we use mixed quinoa)
- 1x 400g can of chickpeas
- Large handful of cherry tomatoes
- 1 red onion
- 3 spring onions
- 1 teaspoon of apple cider vinegar
- 2 tablespoons of pesto (we use our roasted almond pesto)
- Large handful of fresh rocket
- Sprinkling of salt and pepper
Preparation
Cook the quinoa.
Toss everything together.
This recipe can be made in one pan and takes approximately 15 minutes.
