Potato Salad with Chanterelle
Ingredients
- 10 small potatoes
- 4 dl chanterelle
- 1 big handfull of arugula
- 50 g vegan feta
- 2 tbsp olive oil
- a sprinkle of: salt, chili powder & pepper
Preparation
Chop the potatoes into halves
Put in the oven on 200 degrees, for 45 min
Meanwhile fry the chanterelle in 1 tbsp olive oil
Add salt and pepper and fry until they are golden brown
Let everything cool down before adding to a bowl
Sprinkle the feta on top, together with some olive oil and the spieces
Combine everything together and serve
