Potato Salad with Chanterelle

Ingredients

  • 10 small potatoes
  • 4 dl chanterelle
  • 1 big handfull of arugula
  • 50 g vegan feta
  • 2 tbsp olive oil
  • a sprinkle of: salt, chili powder & pepper

Preparation

  1. Chop the potatoes into halves

  2. Put in the oven on 200 degrees, for 45 min

  3. Meanwhile fry the chanterelle in 1 tbsp olive oil

  4. Add salt and pepper and fry until they are golden brown

  5. Let everything cool down before adding to a bowl

  6. Sprinkle the feta on top, together with some olive oil and the spieces

  7. Combine everything together and serve
