Creamy Roasted Vegetables

Ingredients

  • 600g white potatoes
  • olive oil
  • salt
  • coarse black pepper
  • 2 - 3 tbsp mayonnaise
  • 2 - 3 tbsp greek yoghurt
  • chopped chives
  • parsley or coriander to garnish

Preparation

  1. Wash and cut the vegetables roughly into 3cm cubes

  2. Arrange on two oven trays and drizzle with olive oil, sprinkle salt and black pepper (add both to taste) and bake in a preheated oven at gas mark 7, 220°c, 200°c fan oven for 35 - 40 mins or until the veggies are cooked and lightly golden on the outside

  3. Mix the mayonnaise and greek yoghurt together in a small bowl and leave to one side

  4. Once the vegetables are cooked, arrange them in a dish and add dollops of the mayo + yoghurt sauce over the top

  5. Garnish with chopped chives, parsley or coriander and serve immediately

  6. Enjoy!
