Green Pea and Walnut Tart

Ingredients

  • 1 cup walnut pieces
  • 1 cup buckwheat flour
  • 1/2 cup lsa (mix of ground linseed, sunflower seed, almonds)
  • 2 tbs tapioca or corn-starch
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin seeds
  • 1/2 tsp salt
  • 4 tbs unsalted butter (or coconut oil)
  • 2 tbsp cold water
  • filling
  • 2 cups frozen petits pois, thawed
  • 1 cup coconut milk
  • 1/2 cup aquafaba (or 3 egg whites)
  • 4 large leeks halved lengthways and finely sliced
  • 2 cloves garlic minced
  • 1 tsp fresh grated ginger
  • 1 tbs thai green curry paste
  • 2 tbs olive oil
  • 1 cup baby spinach
  • salt and ground black pepper
  • topping
  • 1 cup coriander
  • 1 tbs almond oil
  • pinch salt flakes

Preparation

  1. Preheat the oven to 200°C

  2. Add all the dry ingredients a food processor and pulse until finely broken down

  3. Add the aquafaba and oil and process until a crumbly dough forms

  4. Add cold water, pulsing until it starts to form a ball

  5. Press into a fluted tart pan and bake for 10 mins. Remove and set aside

  6. For the topping, add the coriander, lime, oil and salt to a food processor and process to form a thick puree
