Creamy Baby Potato Curry

Ingredients

  • baby potatoes: 500g⁠
  • oat cream: 1 cup (or vegan cream alternative)⁠
  • kashmiri chilli powder: 1/2 tbsp⁠
  • turmeric powder: 2 tsp⁠
  • whole spices:⁠
  • cumin seeds: 2 tsp⁠
  • black cardamom: 2⁠
  • green cardamom: 2⁠
  • cloves: 2⁠
  • peppercorns: 4⁠
  • kashmiri chilli: 1⁠
  • powdered spices:⁠
  • kashmiri chilli powder: 1 tsp⁠
  • ginger powder: 1 tsp⁠
  • fennel powder: 2 tsp⁠
  • pepper: 1 tsp⁠
  • garam masala: 1/2 tsp⁠
  • water 1 1/2 cups (plus more for boiling potatoes)⁠
  • salt to taste⁠
  • vegetable oil⁠

Preparation

  1. Boil baby potatoes in water for 10 minutes (till almost cooked)

  2. Cool, peel and pierce each potato with a fork 3-4 times

  3. Mix potatoes with turmeric and chilli powder

  4. Shallow fry in vegetable oil till crispy or drizzle with vegetable oil and roast at 180 for 15 minutes

  5. Heat 1 tbsp oil in a pan and add the listed whole spices

  6. Cook on a low flame till oil is fragrant

  7. Add oat cream and water and the powdered spices

  8. Bring to a simmer, add cooked potatoes and 1/2 cup water

  9. Put the lid on and cook on a low flame for 7- 10

  10. Serve with rice or quinoa, and enjoy! ?️⁠
