Creamy Baby Potato Curry
Ingredients
- baby potatoes: 500g
- oat cream: 1 cup (or vegan cream alternative)
- kashmiri chilli powder: 1/2 tbsp
- turmeric powder: 2 tsp
- whole spices:
- cumin seeds: 2 tsp
- black cardamom: 2
- green cardamom: 2
- cloves: 2
- peppercorns: 4
- kashmiri chilli: 1
- powdered spices:
- kashmiri chilli powder: 1 tsp
- ginger powder: 1 tsp
- fennel powder: 2 tsp
- pepper: 1 tsp
- garam masala: 1/2 tsp
- water 1 1/2 cups (plus more for boiling potatoes)
- salt to taste
- vegetable oil
Preparation
Boil baby potatoes in water for 10 minutes (till almost cooked)
Cool, peel and pierce each potato with a fork 3-4 times
Mix potatoes with turmeric and chilli powder
Shallow fry in vegetable oil till crispy or drizzle with vegetable oil and roast at 180 for 15 minutes
Heat 1 tbsp oil in a pan and add the listed whole spices
Cook on a low flame till oil is fragrant
Add oat cream and water and the powdered spices
Bring to a simmer, add cooked potatoes and 1/2 cup water
Put the lid on and cook on a low flame for 7- 10
Serve with rice or quinoa, and enjoy! ?️
