Seitan Sausage Crumbles with Gravy
Ingredients
Seitan
- 1 cup wheat gluten flour
- 1/4 cup nutritional yeast
- 1 tsp dried sage
- 1/4 tsp ground white pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/4 tsp garlic powder
- 1 cup water
- 1 Tbl soy sauce or tamari
Gravy
- 1 pound vegan sausage (from above)
- 3 Tbl vegan butter
- 3 Tbl all purpose flour
- 1 tsp salt
- 1/4 tsp white pepper
- 3 cups unsweetened oat milk
Preparation
Whisk together the dry ingredients.
Mix in the wet ingredients; the seitan should be a fairly wet dough.
Pull off small chunks and place them into a large non-stick pan.
Once all seitan is added, place the pan on high heat and cook for 5 minutes, then flip the seitan and cook for an additional 5 minutes.
Pour 2 cups of water over the seitan, cover, and cook without stirring for 15-20 minutes.
Use a heavy spoon to stir and break apart the seitan into small pieces; add 1-2 tablespoons of oil if desired for crispness.
Transfer the seitan to a large bowl.
In the same pan, melt the vegan butter, then whisk in the flour, salt, and white pepper.
Add the milk and heat while whisking until the mixture is bubbling and thick.
Add in the cooked sausage and serve over biscuits.
