Vegan Chickpea Curry
Ingredients
- 1 tbsp curry powder
- 1/4 tsp crushed red peppers
- 1 tbsp cane sugar or coconut sugar
- 4 tbsp nutritional yeast
- 1 tbsp tomato paste
- 1 can drained chickpeas
- 1 can coconut milk .
Preparation
Sauté capsicum and onion for 5 minutes
Add curry powder, crushed red peppers, cane sugar, nutritional yeast, tomato paste and the drained chickpeas and sauté for a few minutes
Then add coconut milk, let simmer until preferred consistency
Serve with basmati rice and top with basil
