Vegan Chickpea Curry

Ingredients

  • 1 tbsp curry powder ⁠
  • 1/4 tsp crushed red peppers ⁠
  • 1 tbsp cane sugar or coconut sugar ⁠
  • 4 tbsp nutritional yeast ⁠
  • 1 tbsp tomato paste ⁠
  • 1 can drained chickpeas ⁠
  • 1 can coconut milk .⁠

Preparation

  1. Sauté capsicum and onion for 5 minutes

  2. Add curry powder, crushed red peppers, cane sugar, nutritional yeast, tomato paste and the drained chickpeas and sauté for a few minutes

  3. Then add coconut milk, let simmer until preferred consistency

  4. Serve with basmati rice and top with basil
