Vegan Pesto Pizza
Ingredients
Pizza
- Cauliflower pizza base
- Zucchini
- Heirloom green tomatoes
- Green onions
- Kale
- Basil
Pesto
- 15g basil
- 4 tbsp olive oil
- 2 tbsp water
- Splash lemon juice
- 1/4 cup cashews
- 2 garlic cloves
Buffalo mozzarella
- 3 tbsp almond milk cheese
- 1 tbsp yeast flakes
- 1 tbsp oat milk
Preparation
Preheat the oven to 250°C. Prepare the pesto by blending all ingredients in a food processor or blender and set aside.
If using a thick pizza base, preheat it in the oven to make it crispier.
Add the pesto to the pizza base, chop the vegetables, and add them on top. Cook in the oven until golden.
Prepare the mozzarella by mixing the ingredients together in a bowl. Top the cooked pizza with it one tablespoon at a time until desired appearance. Sprinkle on spring onions and basil. Enjoy.
