Wild Leek Pasta

Ingredients

  • 4 cups spinach
  • 1/2 cup frozen peas
  • 4 cups wild mushrooms sliced
  • 1/4 vegan parm
  • 4 tbsp olive oil
  • pinch chilli flakes
  • sea salt and cracked pepper

Preparation

  1. Bring water to boil and salt, add pasta and cook

  2. This particular brand takes a little longer than most

  3. Cook till al dente

  4. In large pan heat 2 tbsp olive oil and add in sliced wild leeks and garlic

  5. Sauté till fragrant

  6. Add in a shrooms

  7. Add a couple tbsp pasta water to keep pan moist

  8. Add peas, spinach salt and pepper

  9. Add cooked pasta, ramp leaves and Parmesan

  10. Add olive oil, taste for seasoning and serve
