Wild Leek Pasta
Ingredients
- 4 cups spinach
- 1/2 cup frozen peas
- 4 cups wild mushrooms sliced
- 1/4 vegan parm
- 4 tbsp olive oil
- pinch chilli flakes
- sea salt and cracked pepper
Preparation
Bring water to boil and salt, add pasta and cook
This particular brand takes a little longer than most
Cook till al dente
In large pan heat 2 tbsp olive oil and add in sliced wild leeks and garlic
Sauté till fragrant
Add in a shrooms
Add a couple tbsp pasta water to keep pan moist
Add peas, spinach salt and pepper
Add cooked pasta, ramp leaves and Parmesan
Add olive oil, taste for seasoning and serve
