Barley, Parsley and Pine Nuts Salad
Ingredients
- 1 cup pearled barley
- 4 tsp extra virgin olive oil
- 1-1.5 cups Italian parsley, chopped
- 1/2 onion, chopped
- 1 yellow bell pepper, diced
- 6 oz feta cheese (dairy or vegan)
- 2-3 tsp fresh lemon juice
- 1/2 tsp cumin
- 1/2 tsp coriander seeds, crushed
- 1/3 cup pine nuts, lightly toasted
- 3 garlic cloves, crushed
- 1 tsp za’atar
- 1 tsp sumac
- 1/2 tsp allspice
- salt
- black pepper, freshly ground
Preparation
In a small saucepan, place the barley and cover with water. Boil for 30 minutes until the barley is tender but not mushy.
Drain the water and transfer to a medium bowl.
Add the rest of the ingredients and mix well together.
Taste and adjust the seasonings.
Tips
This salad can be served at room temperature, cold, or hot.
