Corned Beef Hash
Ingredients
- 1 tbsp veg oil
- 1x 340g tin corned beef - cubed
- 1.25kg floury potatoes
- 1 large onion finely sliced
- 1x 400g can chopped tomatoes - drained (save the liquid for another dish x)
- salt and pepper
Preparation
Peel and chop your potatoes into even size pieces
Simmer gently until soft through, drain well
While the potatoes are cooking fry off the onions in the onion on a medium heat until they’re soft
If you want to use less fat you cook them through with a couple of tablespoons of water instead
Add the corned beef cubes to the drained potatoes and roughly mash them, you want some bigger chunks left for texture
Mix in the chopped tomatoes and then season to taste
Decant the mixture into an ovenproof dish and bake for 30 mins fan oven 180, top oven 200 degrees, or until you have a nice crusty top
Serve with fresh or frozen veg
