Creamy Vegan Pasta Alfredo

Ingredients

  • 2 cups cauliflower
  • 2 tbsp nutritional yeast
  • 1/2 cup cashew nuts
  • 2 cups oatmilk
  • 2 cups mushrooms
  • 1 tbsp vegan butter
  • 2 tbsp soy sauce
  • 1/2 tsp salt
  • 1 tsp garlic
  • pasta

Preparation

  1. Boil the cashews for 15 minutes, then boil the cauliflower until it softens.

  2. In a blender, mix the cauliflower, cashews, oat milk, nutritional yeast, salt, and garlic.

  3. Cook the pasta according to package instructions

  4. In a pan, fry the mushrooms in vegan butter, then add the sauce and pasta.
