Loaded Nourish Bowl with Black Bean Falafel
Ingredients
- 1 large onion (~200g)
- 3 cloves garlic
- 2 large carrots (~200g)
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp chili powder
- 1/4 tsp cayenne
- 1/2 tsp black pepper
- 1 tsp salt
- 1 1/2 cups (400g) cooked black beans
- 1/2 cup (40g) rolled oats
- 1/4 cup (30g) chickpea flour
- 1/4 cup tahini
- 1/4 cup hot water
- 1 tbsp lemon juice
- 1 tbsp sriracha
- 2 tsp maple syrup

- salt and pepper to taste
Preparation
Saute the onion, garlic, and carrots in a frying pan for 5-6 minutes.
Add the spices (cumin, coriander, chili powder, cayenne, black pepper, salt) and incorporate well.
Once fragrant, transfer the mixture to a food processor along with the black beans, rolled oats, and chickpea flour, then pulse into a homogeneous mixture.
Roll the mixture into balls and cook in a greased pan on medium heat until browned, flipping halfway, or bake at 350°F for 25 minutes.
For the tahini dressing, mix tahini, hot water, lemon juice, sriracha, maple syrup, and salt and pepper to taste.
Assemble the nourish bowl by combining black bean falafel, tahini dressing, corn, chickpeas, sweet peppers, spinach, cucumber, and cherry tomatoes.
