Rice Noodles with Vegetables

Ingredients

  • 2 to 3 servings rice noodles
  • 2 bell peppers, thinly sliced
  • 3 to 4 cups thinly sliced cabbage

Sauce

  • 1 to 3 tsp chili garlic sauce (spicy)
  • 1 tbsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tbsp ginger paste
  • 1 tsp garlic powder
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp agave
  • 2 tsp cornstarch + 1 tbsp water mixed
  • 1/4 cup vegetable broth

Garnishes

  • Sesame seeds
  • Cilantro

Preparation

  1. Cook and rinse rice noodles. Drizzle a small amount of sesame oil on them and toss.

  2. Meanwhile, saute the bell peppers in a touch of oil or vegetable broth for 3 minutes.

  3. Add the sauce ingredients and the cabbage to the pan, cook until cabbage is just wilted.

  4. Add the noodles, stir gently, allowing sauce to coat noodles.

  5. Serve with sesame seeds and cilantro if desired.

Tips

  1. Adjust the amount of chili garlic sauce to control the spiciness.

  2. This dish can be prepared in under 30 minutes.
