Thai Yellow Curry with Cauliflower Rice

Ingredients

  • 1 pack Lobo paste
  • 1 small onion
  • 400g chicken breast
  • 400ml coconut milk
  • 200g new potatoes
  • 100g greek yoghurt

Cauliflower rice components

  • 2 pouches frozen cauliflower rice
  • 1 tsp butter

Preparation

  1. Dice a small onion.

  2. Heat the pack of paste and cook the onion in it until soft.

  3. Add 400g chicken breast and fry until browned.

  4. Pour in 400ml coconut milk.

  5. Add 200g new potatoes chopped into large slices or quarters.

  6. Stir together and cook on a simmer for 25-30 minutes.

  7. Add 100g greek yoghurt a few minutes before the end and stir through.

Cauliflower rice cooking

  1. Fry 2 pouches frozen cauliflower rice in 1 tsp butter.

  2. Serve with the curry.
