Beef Stroganoff for Tonight's Dinner

Ingredients

  • 1 diced medium onion
  • 250g sliced chestnut mushrooms
  • 200g greek yoghurt - the sour cream was mouldy so i had to substitute
  • 1 tbsp paprika
  • 30g butter
  • 2 bags frozen cauliflower rice

Preparation

  1. Soften the onion in 2 tsp butter until cooked - put to one side

  2. In the same pan add another 2 tsp butter and cook the sliced mushrooms until most of the water has gone - put to one side

  3. Melt a further 2 tsp butter in the pan and cook the rump steak strips to your liking - put to one side

  4. Top the cooked onion and mushrooms back in the pan and heat through

  5. Add 1 tbsp paprika, stir through and add the steak steps back in

  6. Pour 200g greek yoghurt in and stir through until cooked

  7. Microwave the cauliflower rice and serve
