Low Carb Beef Stroganoff with Buckwheat Groats

Ingredients

  • 500g rump steak
  • 1 small onion
  • 2 tablespoons butter
  • 250g sliced mushrooms
  • 1 teaspoon olive oil
  • 2 tablespoons sweet smoked paprika
  • 300ml sour cream
  • 50g buckwheat groats

Preparation

  1. Dice a small onion and soften it in 1 tablespoon of butter until translucent, then transfer to a dish.

  2. Add another tablespoon of butter to the pan and cook 250g sliced mushrooms until done, then add to the dish with the onions.

  3. Fry 500g rump steak in 1 teaspoon of olive oil until browned.

  4. Return the onions and mushrooms to the pan with the steak.

  5. Add 2 tablespoons of sweet smoked paprika and stir to coat everything.

  6. Add 300ml of sour cream, stir, and heat through until ready to serve.

  7. Serve with 50g cooked buckwheat groats.

  8. Note: Calories per portion are 615 with 8g carbs for the stroganoff only; adding buckwheat groats increases to 184 more calories and 35g carbs. WW points total 20 for the entire meal.
