Low Carb Beef Stroganoff with Buckwheat Groats
Ingredients
- 500g rump steak
- 1 small onion
- 2 tablespoons butter
- 250g sliced mushrooms
- 1 teaspoon olive oil
- 2 tablespoons sweet smoked paprika
- 300ml sour cream
- 50g buckwheat groats
Preparation
Dice a small onion and soften it in 1 tablespoon of butter until translucent, then transfer to a dish.
Add another tablespoon of butter to the pan and cook 250g sliced mushrooms until done, then add to the dish with the onions.
Fry 500g rump steak in 1 teaspoon of olive oil until browned.
Return the onions and mushrooms to the pan with the steak.
Add 2 tablespoons of sweet smoked paprika and stir to coat everything.
Add 300ml of sour cream, stir, and heat through until ready to serve.
Serve with 50g cooked buckwheat groats.
