Cauliflower Egg Fried Rice with Veggies

Ingredients

  • 2 pouches frozen cauliflower rice
  • 2 teaspoons ghee
  • 2 carrots
  • 1 onion
  • 100 grams frozen peas
  • 6 pork sausages
  • 1 egg

Preparation

  1. Melt 1 teaspoon ghee and fry 2 pouches of frozen cauliflower rice. Set aside.

  2. Melt another teaspoon of ghee and stir fry 2 finely diced carrots, 1 diced onion, 100 grams frozen peas, and 6 sliced and diced pork sausages.

  3. Mix in the beaten egg and cook through.

  4. Add the rice back in to heat through and serve.

  5. Use different vegetables to keep the dish low carb if desired.
