Quick Fried Egg and Veggie Dinner

Ingredients

  • 1 egg
  • Ghee
  • Everything but the bagel seasoning
  • 1 tablespoon olive oil
  • Shaved Brussels sprouts
  • 1/2 avocado
  • Leftover bacon

Preparation

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.

  2. Add shaved Brussels sprouts and sauté for 8 minutes until softened.

  3. In a separate pan, heat ghee and fry the egg.

  4. Reheat leftover bacon in the pan with the egg.

  5. Top the fried egg with everything but the bagel seasoning.

  6. Serve with the sautéed Brussels sprouts and 1/2 avocado.
