Easy Low Carb Swoodle Carbonara Dinner
Ingredients
- 250g bag Swoodles
- 6 rashers back bacon
- 250g chestnut mushrooms
- 1 large egg
- 3 egg yolks
- 60g parmesan
- 1 tsp ghee
Preparation
Chop the bacon and mushrooms and fry in the ghee.
Mix the egg, yolks and parmesan together.
Microwave the Swoodles for 4.5 minutes and tip into the pan with the bacon and mushrooms.
Heat through, remove from the heat and tip in the eggs and parmesan mix.
Stir through until the sauce thickens, pop on a low heat now and again if more heat needed but not too high or you'll scramble the sauce.
Serve with an extra 15g parmesan on top.
